Ingredients
1wholegood large cucumber,diced
2medium tomatoes,diced
1bell pepper,diced, any color
1/2red onion,finely chopped
1/4cupfresh parsley,chopped
1lemon,juice
2tbspolive oil,extra virgin
salt and pepper,to taste
Instructions
In the large bowl combine the diced cucumber, tomatoes, red bell pepper, red onion and fresh parsley.
In a small bowl, whisk together the lemon juice and extra-virgin olive oil. Season with salt and pepper to taste.
Pour dressing over the salad ingredients and gently toss to coat the vegetables evenly with the dressing.
