We find that sea bass is ideal for weeknight cooking. It cooks up quickly compared to heartier fish like salmon. The buttery texture and mild sweetness pair beautifully with the bright, summery notes of the lemon-herb marinade. Served with a fresh salad or roasted vegetables, it’s a meal we eagerly anticipate as Friday rolls around each week. Light, full of flavor, and easy to make – this sea bass is a recipe we’re happy to call our own.

The ingredients for lemon and herb sea bass: five sea bass fillets, a whole lemon, a good pinch of salt and pepper, two peeled garlic cloves, olive oil in a small ramekin, and sprigs of fresh rosemary and thyme.

LEMON AND HERB SEA BASS INGREDIENTS

Lemon and Herb Sea Bass exudes rich flavors, incorporating fresh herbs like rosemary and thyme leaves. Feel free to use any fresh herbs or dry seasoning for a personalized touch.

  • Sea Bass Fillets – We use frozen sea bass fillets, thawed overnight in the fridge before cooking. Fresh fillets are always best when available.
  • Lemon – Lemon adds fantastic brightness to fish while also lending moisture to prevent drying out during cooking.
  • Olive Oil – Olive oil subtly flavors the marinade and creates a protective coating to reduce sticking.
  • Garlic – Minced fresh garlic is ideal, but garlic powder works too. We prefer fresh when possible.
  • Fresh Herbs – Fresh herbs infuse incredible flavor; we used rosemary and thyme but any fresh herbs work.
  • Salt and Pepper – Season to taste.

LEMON AND HERB SEA BASS PAIRS WELL WITH VEGGIES

Tenderstem broccoli and asparagus make the dish feel light yet satisfying. We enjoy the green colors and crunch they provide – it perfectly complements the bright lemon and herb flavors. Both quick-cooking veggies pair so nicely with the fish.

Atop a wooden chopping board sits a bundle of green tenderstem broccoli on the left side and a bundle of green asparagus spears on the right. The tenderstem broccoli has long stalks with small, compact floral florets clustered together in a bunch. The asparagus spears are long, thin, and straight with pointed tips.

Asparagus – Asparagus is low in calories and contains essential vitamins and minerals. It is a good source of fiber, folate, vitamins A, C, E and K, as well as chromium which helps regulate blood sugar. Asparagus contains glutathione, a powerful antioxidant that may help protect cells from damage. The vegetable also contains the nutrients rutin and quercetin which have anti-inflammatory properties.

Tenderstem Broccoli – Like other broccoli varieties, tenderstem broccoli provides a nutritional powerhouse. It contains sulforaphane, a compound with cancer-fighting abilities. The florets are high in vitamin C, vitamin K, and fiber. Tenderstem broccoli also contains glucoraphanin, a phytonutrient that supports the body’s natural detoxification processes. The vegetable is packed with antioxidants like quercetin as well. Its high fiber and low-calorie content make it a nutritious addition to any meal.

VARIATIONS

We personally enjoy the way this marinade is, but you can always think of ways to customize it to your liking.

  • Swap herbs – we use fresh thyme and rosemary for this marinade, however, instead, you can experiment with various herbs such as basil, cilantro or parsley.
  • Change a side – we had a bunch of asparagus and tenderstem broccoli in the fridge, and we wanted a low-carb option. However, you can also swap it for your favorite side. Roasted potatoes or rice would work great.
  • Cooking options – We baked the fish, but it will taste great if you grill or air fry it.
