Sweet Soy Garlic Chicken Ingredients:

Chicken Marinade:

  • 500g Chicken
  • 1 tsp Salt
  • 1 tsp Garlic Granules
  • 1 tsp Onion Granules
  • 0.5 tsp Black Pepper
  • 0.5 tsp Ground Ginger

Seasoned Flour mix:

  • 300g Flour
  • 1 tsp Salt
  • 1 tsp White Pepper
  • 1 tsp Smoked Paprika

Sweet Soy Garlic sauce:

  • 7 cloves of Garlic (approx. 30g)
  • 1 tbsp Light Soy Sauce
  • 1 tbsp Maple Syrup
  • 1 tbsp Rice Vinegar

Instructions:

Prep:

  1. Begin by making your chicken marinade. First, in a bowl, combine the salt, garlic granules, onion granules, black pepper, and ground ginger. This marinade, bursting with flavor, will deeply infuse the chicken, setting the base for our dish’s savory richness.
  2. Next, cut your chicken into bite-sized pieces and ensure each piece gets a generous coating of the marinade. Let it sit for at least 30 minutes. However, if you can leave it overnight in the fridge, the flavor results will be even more spectacular.
  3. While the chicken is marinating, prepare your seasoned flour. In another bowl, combine the flour, salt, white pepper, and smoked paprika. This flour will later provide a crispy, delectable crust to our chicken.
  4. When the chicken has marinated, coat each piece in the seasoned flour, then dip it in cold water for 5 seconds and repeat the coating process. This is a trick we’ve learned that gives the chicken that extra crispiness we all love.

Cooking:

  1. Now, it’s time to create the star of our dish: the sauce. First, finely chop your garlic. Then, in a saucepan over medium heat, sauté the chopped garlic until it turns slightly golden and fragrant. Next, add the light soy sauce, maple syrup, and rice vinegar to the saucepan. Stir well and let it simmer for a few minutes.
  2. Now let’s bring your chicken to life. Fry each piece until it turns a lovely golden brown and is thoroughly cooked. For this step, we usually use a cooking pot with 1L of vegetable oil, making sure there’s enough room for each piece of chicken.
  3. When the chicken is done and the sauce is ready, it’s time for the grand finale: dressing the chicken in the sauce. Toss until each piece is beautifully glazed.
  4. We recommend serving your Sweet Soy Garlic Chicken hot, accompanied by steamed jasmine rice or stir-fried vegetables. Feel free to sprinkle some sesame seeds or fresh parsley for garnishing.
