Lemon and Herb Chicken – is an easy and delicious Mediterranean option for lunch or dinner. All seasonings and additional ingredients just create a perfect flavor that most people will love. It is so simple and quick to make, that I guarantee is going to become one of your favorite dishes to cook.
There are two different ways to do marinade by using dry ingredients or you can tweak this recipe by using fresh ingredients, especially during the summer season! We have created the one with dry seasonings! Let’s don’t wait any longer and just jump to the recipe below.
Lemon and Herb Chicken Ingredients:
- 2 large chicken breasts (approximately 440g total, 220g each)
- 1 tsp sea salt
- 1 tsp thyme
- 1 tsp oregano
- 1/2 tsp rosemary
- 1 lemon juice
- 2-4 garlic cloves (20g), minced
- 1 tbsp olive oil
Instructions:
- In a small bowl, combine the sea salt, thyme, oregano, and rosemary. Mix well to create the herb seasoning blend.
- Place the chicken breasts in a shallow dish or a zip-top bag. Sprinkle the herb seasoning blend evenly over both sides of the chicken breasts, ensuring they are well coated. Gently press the herbs into the chicken to help them adhere.
- In a separate bowl, combine the lemon juice, minced garlic, and olive oil. Stir the mixture to combine all the ingredients.
- Pour the lemon and garlic mixture over the seasoned chicken breasts, making sure they are coated thoroughly. If using a zip-top bag, seal the bag tightly, removing any excess air. If using a dish, cover it with plastic wrap. Marinate the chicken in the refrigerator for at least 2 hours or overnight for the best flavor.
- Preheat the oven to 180°C (350°F).
- Remove the chicken breasts from the marinade and place them on a cooking tray or in a roasting tin with a grill rack.
- Bake the chicken breasts in the preheated oven for approximately 40 minutes or until they reach an internal temperature of 75°C (165°F). Cooking times may vary slightly depending on the thickness of the chicken breasts.
- Once cooked, remove the chicken from the oven and let it rest for a few minutes. This is a very important step as the chicken becomes more tender and juicier.
