Hot and Crunchy: Chicken Wings – There’s an undeniable joy in the simple pleasure of sinking your teeth into a crunchy, perfectly spiced chicken wing. Moreover, it has become a cherished experience in our family kitchen. As a result, we have always enjoyed KFC chicken wings and tried to recreate their deliciousness at home. After numerous attempts, we finally mastered our own hot and crunchy wings recipe, which can be made with varying levels of spiciness. Ingredients for hot and crunchy chicken wings:

Chicken marinate ingredients:

  • 1kg Chicken Wings
  • 1 tsp White Pepper
  • 1 tsp Black Pepper
  • 1 tsp Onion Granules
  • 1 tsp Smoked Paprika
  • 1 tbsp Chilli Powder
  • 1 tbsp Cayenne Pepper
  • 1 tbsp Salt

Cooking ingredient:

  • 1L Vegetable Oil

Flour mix ingredients:

  • 400-500g of Flour
  • 1 tsp Salt
  • 1 tsp White Pepper
  • 1 tsp Chilli Powder
  • 1 tsp Garlic Powder

Instructions:

  1. Start by getting your oil up to a steady 180C. Meanwhile, let’s move on to preparing the chicken wings.
  2. In a large bowl, mix together the white pepper, black pepper, onion granules, smoked paprika, chilli powder, cayenne pepper, and salt. This spicy concoction will pack your wings with that bold, lip-smacking flavour we’re after.
  3. Give your chicken wings a good rub with this spice mix, ensuring each piece is well coated.
  4. Next, it’s time for the flour mix. In a different bowl, combine the flour, salt, white pepper, chilli powder, and garlic powder. Stir well to blend. This seasoned flour will bestow your wings with that delightful, crunchy crust.
  5. One at a time, thoroughly coat your seasoned chicken wings in the flour mixture.
  6. Here’s a trick I swear by immersing each floured wing in cold water for about 5 seconds, then dredging them back into the flour mix for a second coat. Double-dipping gives your wings a thicker, more satisfying crunch.
  7. With your wings double-coated and your oil ready, carefully lower the wings into the hot oil. Cook until they turn golden brown and crispy, and the chicken is cooked thoroughly.
  8. Once done, transfer the wings to a wire rack or kitchen paper to let any excess oil drain away.
  9. Serve these homemade spicy chicken wings piping hot, and watch your family’s faces light up with delight!
