Hello friends! Today on our menu is the full-flavored Grilled Peri Peri Chicken, packing an extra kick of chili. We, the Box The Lunch family, are huge fans of chicken dishes, and we firmly believe that grilled peri-peri chicken is a dish everyone must try! We’re using a Tefal Grill for this dish, but if you don’t have one, that’s okay – you can still cook your marinated chicken in an oven. This mouthwatering recipe is suitable for both indoor and outdoor cooking, making it a perfect BBQ option for good weather.
Peri Peri Chicken originates from Portuguese cuisine but also carries strong influences from African flavors. For this chicken marinade, we’ll be using dry seasonings. However, we always suggest that if you have some fresh ingredients in your fridge, feel free to tweak the recipe. Infuse your delicious meal with your own fresh herbs or other ingredients for a unique touch!
Grilled Peri Peri Ingredients:
Chicken marinade (Serves approximately 4 – 6 people):
- 1 kg chicken thighs
- 1 tsp smoked paprika
- 2 tsp paprika
- 1 tsp onion granules
- 1 tsp garlic granules
- 1/2 tsp black pepper
- 1/2 tsp ground nutmeg
- 1/2 tsp cayenne pepper (adjust to your spice preference)
- 1 tsp salt
- 1 tsp dried parsley
- 1 tsp dried oregano
- Juice of 1 lime
Grilled Peri Peri Cooking Instructions:
Cooking on an Electric Grill:
- Preheat your electric Tefal grill to medium-high heat according to the manufacturer’s instructions.
- In a mixing bowl, combine the smoked paprika, paprika, onion granules, garlic granules, black pepper, ground nutmeg, cayenne pepper (adjust to your spice preference), salt, dried parsley, dried oregano, and the juice of 1 lime. Mix well to create a marinade.
- Place the chicken pieces into a zip-top bag or a shallow dish and pour the marinade over them. Make sure the chicken is evenly coated with the marinade. Seal the bag or cover the dish and let it marinate in the refrigerator for at least 2 hours, or overnight for the best flavour.
- Once the grill is preheated, remove the chicken from the marinade and let any excess marinade drip off.
- Place the chicken on the preheated grill and close the lid. Cook for about 15-20 minutes, or until the internal temperature reaches 165°F (75°C). Check the chicken occasionally to avoid overcooking.
- Once cooked, transfer the chicken to a serving platter and let it rest for a few minutes before serving. This resting period allows the juices to redistribute, resulting in tender and juicy meat.
Cooking in an Oven:
- Preheat your oven to 400°F (200°C).
- Prepare the chicken and marinade as described above.
- Place the chicken on a roasting tin with a grill rack.
- Place the chicken in the preheated oven and bake for about 25-30 minutes, or until the internal temperature reaches 165°F (75°C). You can flip the chicken halfway through cooking for even browning if desired.
- Once cooked, remove the chicken from the oven and let it rest for a few minutes before serving.
- Please note that cooking times may vary depending on the thickness and size of the chicken pieces, so always use a meat thermometer to ensure the chicken is fully cooked.
