Chicken Souvlaki is a popular Greek fast food dish that consists of marinated meat grilled on a skewer. You can enjoy chicken souvlaki in different ways, either directly from the skewer as a kebab or by placing it in a warm pita along with your favorite toppings and sides. One delicious option is to serve chicken souvlaki over steamed rice accompanied by a side of tzatziki sauce. This combination creates a satisfying meal that delivers comfort food at its best. The marinade for chicken souvlaki is easy to make and can be cooked indoors or outdoors, depending on your preference. Let’s begin!

Chicken Souvlaki Ingredients:

Chicken Marinade (Serves approximetly 4 – 6):

  • 4 large chicken breasts (880g)
  • 6 garlic cloves minced
  • 2 medium onions chopped
  • 2 tsp oregano
  • 2 cups of Greek yogurt
  • 1 tbsp olive oil
  • 2/3 bay leaves crushed
  • 0.5 tsp black pepper
  • 0.5 tsp salt
  • 1 lemon juice

Instructions:

  1. Begin by cutting chicken breasts into bite-sized chunks. Place them into a large bowl and set aside.
  2. In a separate bowl, prepare the marinade by combining the garlic and onions, oregano, Greek yogurt, olive oil, bay leaves, black pepper, salt, and the juice of one lemon. Mix everything well.
  3. You should pour the marinade over the chicken chunks, making sure to thoroughly coat all the pieces. Then, toss it around a few times to achieve an even distribution of the marinade.
  4. Cover the bowl and let the chicken marinate in the refrigerator. This could be for a few hours, but for best results, marinate it overnight to allow the flavors to thoroughly infuse the chicken.
  5. When ready to cook, thread the marinated chicken pieces onto skewers. If you are using wooden skewers, make sure to soak them in water for about 30 minutes beforehand to prevent them from burning on the grill.
  6. Preheat the grill or grill pan over medium-high heat. Grill the skewered chicken, making sure to turn them occasionally, for approximately 10 to 12 minutes or until the chicken is fully cooked and has a nice golden-brown color.
  7. Prepare your serving plates with warm pita bread or steamed rice. Once the chicken is done, serve it over your choice of base and add a tzatziki sauce on the side.

Remember, the key to great souvlaki lies in the marinade, so don’t rush this step! For juicier chicken, add salt just before cooking. Salt tends to draw out the liquid from the meat, which can often result in a drier souvlaki.
