Dressed in our favorite Sun-Dried Tomato Dressing, this dish is sure to delight your taste buds.
One of the great things about this salad is that it’s flexible. You’re free to tweak the ingredients to match your preferences. To give you a starting point, we’ve put together a recipe that is not only rich in protein but also packed with other essential nutrients.
Chicken Avocado Edamame Salad Ingredients:
Salad Ingredients (serves 2):
- About 2 small chicken breasts (240g), cooked and sliced
- 2 cups (200g) cherry tomatoes, halved
- 1/3 cup (80g) shelled edamame
- 1/2 medium avocado (80g), sliced
- 2 cups (100g) salad mix or iceberg lettuce, rinsed and dried
Dressing Ingredients (serves 8):
- About ½ cup (80 g) sun-dried tomatoes
- About 1 1/2 tablespoons (20 g) apple cider vinegar
- 4 garlic cloves, minced
- 3 basil leaves, chopped
- About 1 tbsp (15 g) maple syrup
- About ¼ cup (50 g) olive oil
Instructions:
- Start by preheating your oven to 375°F (190°C). Season the chicken breasts with salt and pepper and bake them for 20-25 minutes in the preheated oven, or until chicken breasts are fully cooked.
- As the chicken cooks, you can start making the sun-dried tomato dressing. Add the sun-dried tomatoes, apple cider vinegar, garlic, basil, maple syrup, and olive oil into a small blender or food processor and blend until the mixture becomes smooth and well mixed.
- In the meantime, begin prepping your vegetables. Cut the cherry tomatoes in half, slice the avocado, and coarsely chop the salad mix or lettuce if necessary. Toss these together with the shelled edamame in a large bowl until well combined.
- Once the chicken is fully cooked, allow it to cool slightly before cutting it into small pieces. Add the chicken to the salad bowl.
- Finally, drizzle the salad with the sun-dried tomato dressing and toss everything together until the salad is evenly dressed.
