Have you ever wondered what to do with that single-laying cucumber in your fridge? Well, wonder no more! An Asian Cucumber Salad might be just what you’re craving. It’s the perfect summer dish to enjoy on its own or as a refreshing side to your main course. Plus, this crunchy, homemade Asian Cucumber Salad is both simple and easy to make. So, what are we waiting for? Let’s get started!
Asian Cucumber Salad Ingredients:
- 1 cucumber (175g), thinly sliced using a mandoline slicer
- 1 tablespoon soy sauce
- ½ teaspoon minced garlic
- 1 tablespoon rice vinegar
- 1 teaspoon sesame seeds
- 1 tablespoon maple syrup
- 1 pinch of chilli flakes
- 1 teaspoon sesame oil
- 1 pinch of salt
Instructions:
- Slice your cucumber using mandoline, it is likely that the inside of the cucumber containing the seeds part, won’t be used for this salad, you can put it aside or use it to make cucumber water.
- In a medium-sized bowl, combine the soy sauce, minced garlic, rice vinegar, sesame seeds, maple syrup, chilli flakes, sesame oil, and a pinch of salt. Mix well to combine all the ingredients.
- Add the thinly sliced cucumber to the bowl with the dressing. Toss gently to coat the sliced cucumber with the dressing.
- Allow the cucumber salad to marinate in the dressing for at least 10-15 minutes to let the flavors melt together.
- Once marinated, give the cucumber salad a final toss and transfer it to a serving dish.
- Garnish with additional sesame seeds and chilli flakes if desired.
- Serve the refreshing Asian Cucumber Salad as a side dish or as part of a larger meal.
